Latin name: Althaea officinalis
Uses: Edible, Medicinal
Lifecycle: perennial (zone 5-8)

Marshmallow is a tall bushy plant commonly found growing in marshy areas, which is made evident by its name. All parts of the plant are edible. The roots and leaves have been eaten as a vegetable for centuries. Young leaves are traditionally eaten raw, streamed, boiled or fried for their many benefits. The abundant, pale pink flowers are often used as a garnish for salads. The original marshmallow candies were made from the root simmered with sugar, water and egg whites.

Valued medicinally for its powerful active ingredients that help break up mucus, reduce inflammation and kill bacteria naturally. The roots slippery/mucilaginous quality makes it a powerful demulcent that eases sore throats and indigestion. The powdered root, mixed with water, can be used as a poultice for skin inflammations, rashes, bruises, abrasions, wounds and ulcers. The less potent leaves are used as tea or to make a soothing wash for inflamed skin.
